Savory roasted carrot hash with sage, cinnamon & bacon (Paleo, Primal & Real Food Friendly!)

What you need
For the roasted carrots
  • 3 cups (approx.) of peeled and chopped carrots (I use the chop wizard) to make the pieces perfectly uniform, quickly
  • 2 Tbs. melted ghee (I use Pure Indian Foods) or desired cooking fat
  • 2 Tbs. sage
  • 1 Tbs. cinnamon
  • 1 tsp. sea salt (I use Redmond)
For the bacon
  • ½ lb. bacon, chopped into uniform chunks (more or less bacon is ok too - whatever your taste buds like)
What to do
For the roasted carrots
  1. Heat the oven to 400 degrees.
  2. Toss chopped carrots with melted cooking fat, sage, cinnamon and salt.
  3. Spread carrots across a baking sheet - make sure they're not crowded; give 'em room to roast!
  4. Roast for approximately 20 minutes, or until the carrots begin to brown.
While the carrots roast...cook the bacon
  1. Cook the bacon chunks in a skillet over medium heat until cooked through.
  2. Drain the bacon drippings (save them if desired)
  3. Combine cooked bacon with roasted carrots, top with poached or "pried" eggs, and enjoy!
