"Worcesterque" Kansas City style homemade BBQ sauce

What you need
  • 1 cup tomato puree (can be canned or from the jar)
  • ¾ cup water
  • 8 medjool dates
  • ¼ cup blackstrap molasses
  • 2 tsp. tamarind concentrate (find it here)
  • ½ cup organic white vinegar
  • 3 Tbs. fish sauce (I use Red Boat)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp cayenne pepper
  • ¼ tsp ground cloves
What to do
  1. Put the dates in a cup with the ¾ cup water; microwave for 30 seconds. (Alternatively, you can heat the water in a saucepan, add dates once water is boiling, turn heat off, and wait for 3 minutes.) Be sure to allow date mixture a few minutes to cool either way.
  2. Once date mixture has cooled, combine all ingredients in a food processor (I use this one) or blender.
  3. Blend your little heart out.
  4. BBQ your little heart out.
